STUFFED ARTICHOKES SLOW COOKER




MAKES 2 SERVINGS.
2 artichokes
1/3 cup seasoned breadcrumbs
1/4 cup grated Parmesan cheese
1/8 cup nuts, chopped
1/2 tbs chopped parsley
1 clove garlic, grated
1/2 tsp lemon zest plus 1/2 tbs lemon juice
1 tbs melted unsalted butter
1/4 cup white wine or broth

Cut top third off each artichoke. Trim stems to 1/4". Snip off pointed tips of remaining leaves. Pry open leaves of artichokes. In a bowl, combine breadcrumbs and next 7 ingredients, stir until combined. *HOLD one of the artichokes over bowl with stuffing mixture. Press stuffing into center of artichoke and into spaces between leaves. Repeat. *COMBINE wine with 1 cup water in a slow cooker. Cook on high 4 hours. Remove artichokes to a platter. Garnish with additional Parmesan.
